Citrus Cake Recipe.

The Citrus Cake:

The cake was a simple butter cake recipe. I added the orange pulp from making orange juice with our juicer.

The icing was from Homespun Living.
6T milk
6T butter
1 1/2 cups sugar

Put in a microwave proof jug and heat for 1min. Stir. Then again till mixture almost boils over in the microwave. Remove and add a bag of chocolate. This time I used white chocolate. Stir quickly and pour. Not all of my white chocolate melted as you can see in the photo.

The lemon curd was made by family friends.

Apple Pudding.

Every year for husband E's birthday, I attempt to recreate his Mother's apple pudding. Each year I write new notes to remember for the following year. The first year of marriage, we had the challenge of trying to find the recipe. In the last month a friend gave me a recipe that her husband's Aunt in England used. They were the same! I am not able to ask my Mother in Law for her tips as she died just before we were married.

Last night husband E thought it tasted just right, even though it did not look as he remembered!

Pretty Pears.


Baking Bundles.


Sister in law ARA packaged these bags of flour for bun making in 500g lots. I will add spice, fruit, water and yeast and be able to make buns. The children love them.

Baking Bonanza.

Lemon slice.
Made a few days before husband E's birthday as I will be making pie and pudding for dinner tonight and orange cake with lemon curd filling and white chocolate icing when the cake supply depletes.
At present we have choc chip cookies in the freezer, choc brownies and bun from sister in law AMM and weetbix slice from sister in law HJR. We also have a few little cupcakes left which the children are enjoying.

Sultana Cupcakes.


Today I added sultanas to the cupcakes. I soaked them in apple juice first. J from bookclub soaks hers in sherry. These were the afternoon tea/child version.

The Box is Almost Empty....

I wonder what sort of day was had here?

Chicken and Noodle Soup.


Success, I have made a delicious pot of this soup.


Half a BBQ chicken

Half a celery

2 carrots

1 onion

6 potatoes

sprig rosemary

sprinkling of chives and sweet basil (dried)

1T chicken stock and water to cover


All in the crockpot, remove bones, add noodles one hour before serving.

No Photo, No Cake.

Cupcakes:

125 g butter
3/4 cup sugar
2 eggs
1/2 cup milk
1 and a half cups SR flour
1 T vanilla.

Mix till pale and creamy. Bake for 10-15 min.

Ice.

After quite a few years of baking, I have only now discovered the joy in using icing mixture instead of icing sugar. No lumps, so easy and smooth to mix.......I squeezed a lemonade, added some icing mixture and drizzled; YUM.

Wonderful. Thanks to J from bookclub. No photo as they were all eaten this afternoon!! We did have three visitors..........

Last week, I received a lovely gift from Lynda in Tanzania- a traditional kitenge cloth. Our 10 year old son was so excited to see a package from Africa in the letter box.

THE Chocolate Chip Cookie.


In search of a good choc chip cookie recipe, for baking for a fete, Mothers' Day, family and maybe even me.........


I am trying Attic 24 's recipe today.


Funny how everything is basically a shade of brown in the ingredient's list.....


I was going to test these at 3:30pm when the school children came home, but I have tested one and this recipe is the best ever!!!!!!!!!!!!!!!!!!!!!!!!!

A Fairy in the House.


Here is my Bad for Your Cholesterol and Blood Sugar Chocolate Cake.

Chocolate almond cake with butterscotch icing:

250g butter
2T golden syrup
3/4 cup brown sugar.

Whip, spread and put caramel chocolate all over it.

If a meal scores six out of six here, it is a winner. This one did.




Coat chicken in olive oil and then in a mixture of bread crumbs and parmesan cheese. Bake in the oven.
