Venetian Carrot Cake.


Venetian Carrot Cake as viewed on an episode of Nigella Lawson's recipes.
Ingredients include rum soaked raisins, almond meal, carrot, olive oil and pine nuts.  Serve with mascarpone (with icing sugar and rum).

Mercy, you are into cake baking. I love to bake cakes and I love eating cake as well. I do not know about the pine nuts in this cake though...what is your personal opinion after trying the cake?

Oh the pine nuts were delicious. A very rich cake which had a hint of marzipan about it. It was gluten and dairy free; no mean feat.
