Wednesday's Baking

Shortbread:


This is a double quantity:
500g butter
1 cup castor sugar
1 cup rice flour
4 cups plain flour

Melt butter, add sugar and then gradually mix in flours. Spread in two slice tins.
Bake for about 40 minutes in 160-180 degree oven.

This recipe comes from a 'Women's Weekly' recipe book ('Sweet Old Fashioned Favourites')
Now if anyone has some good tips as to how to prevent the shortbread from cracking when I cut it, please let me know...
